Just starting the process, my doc just told me she is putting me in for a medboard. I’m trying to stretch out my 180 day timeline so my daughter can stay local to graduate highschool. I should have an insane amount of claims, is there any point in the process I can take more time?

You could potentially try to get your VA exams scheduled later, you could try to add conditions and have your PCM take their time writing the NARSUM addendum, in the PEB phase you can you can do an FPEB and a VARR, then you can ask for 20 days pTDY from your commander. You could also ask for free legal counsel at this point which might be able to assist with the process.
The C&P exams are done by a private contractor. If you have a narrow set of preferences it will be harder for them to get you exams for everything. My wife was able to delay during that part by stating she only felt comfortable seeing female doctors. They couldn't find an eye doctor and a dentist doctor that was female an it delayed everything by 6 months. That allowed her to ensure she hit 20 good years. After 6 months she rescinded the conditions that were being held up by them not being able to find a local female doctor for those C&P exams.

@bunny46307 The amount of time you want to extend can dictate which delay strategy you want to employ. You'd be surprised what timelines look like depending on manning, administrative delays, and (like @RuffBader said) which route your case takes. Be sure you get with your IPEB counsel, FPEB counsel, or private attorney to create a comprehensive strategy that takes into consideration the nuances of your claims. @Provis makes a good point. Getting creative can be a game-changer.
What is an fpeb and a varr?
An FPEB is a Formal Physical Evaluation Board and a VARR is a VA Reconsideration Request; a formal hearing to dispute your IPEB findings and a request for the VA to reconsider the disability ratings for any or all of your unfitting conditions, respectively.
