This is a rough timeline because my memory isn't serving me well nowadays, so some more minor events won't be included. But the big ones are there.

August 7th: Assigned to MEB
August 14th: Assigned to QTC
August 16th: All Appointments schedule
- appointments, appointments, appointments...
September 28th: All appointments done (There were about 27 of them so you can anticipate if you're on top of it to have them done sooner unless you have more issues than me in which case god help you)
October 7th: All exam results are in
October 18th: Case sent to PEB (Took a little longer than usual to send to PEB just because of the quantity of issues and my PEBLO not talking to me to let me know about some stuff I needed to do)
October 22nd: Case accepted by PEB
Today, October 29th, just hanging out. Given a 2-3 month estimate but hoping and praying it'll be sooner while expecting it to be longer. I was told I have a rater.

I'll give an update once I receive my new EAS to give some people an idea of the PEB portions timelines right now. If there are any questions feel free to ask! This is a long process, with a lot of confusing and sometimes unspoken stuff. Don't be afraid to seek information from several sources.
 
Similar timeline to yours:

July 8th: Med board initiated.
July 15th: Signed first papers sending my package to MEBAA
August 7th: Med board accepted by MEBAA
August 22nd: Legal Brief
September 10th-September 30th: Attended VA exams
October 22nd: Met with PEBLO and Lawyer, signed off on my package.
October 25th: Packaged signed off and sent to Med Board

Limited info and uncertain timelines definitely add to the anxiety of this process, but I hope this helps someone else in a similar situation as mine.
